Method

Add grated ginger to hot water and let steep for 5–10 minutes.

2. Strain
Strain out the ginger pieces, keeping the liquid.

3. Add flavour
Stir in lemon or lime juice and honey.

4. Finish with bubbles
Add sparkling water and mix gently.

5. Serve
Best served warm or slightly cooled (not ice cold).
