  • 1 tsp honey

  • Splash of warm water to thin


Method

1. Roast the carrots
Preheat oven to 180°C. Toss carrots with olive oil and salt. Roast for 25–35 minutes until tender and slightly caramelised.

2. Toast the walnuts
Lightly toast walnuts in a pan until fragrant.

3. Prepare the tahini drizzle
Mix tahini with lemon juice, honey, and a splash of warm water until smooth.

4. Assemble
Place roasted carrots on a plate, top with walnuts, and drizzle with tahini dressing.
