Ingredients

  • 3–4 medium beetroot, peeled and chopped

  • 1–2 tbsp olive oil

  • Salt to taste

  • 2–3 cups leafy greens (rocket, spinach, or kale)

  • 1/4 cup nuts or seeds (walnuts, pumpkin seeds, or almonds)

  • Optional: goat’s cheese or feta

Simple dressing:

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar or lemon juice

  • 1 tsp honey (optional)


Method

1. Roast the beetroot
Preheat oven to 180°C. Toss beetroot with olive oil and salt. Roast for 30–40 minutes until tender and slightly caramelised.

2. Prepare the base
Place leafy greens in a large bowl.

3. Add warmth
Once cooked, allow beetroot to cool slightly (so it’s warm, not hot), then add to the greens.

4. Finish the salad
Top with nuts or seeds and optional cheese. Drizzle with dressing and gently toss.
